Eggnog Cookie Waffles

It's a whole New Year, and you know what THAT means - Whoo hoo!!! Holiday stuff is on sale!
We bought a few packs of Betty Crocker Eggnog Cookie Mix on clearance just to see if it would make a good base for waffles. (I also bought the Gingerbread ones, but one of those made it into cookies already.)



 Hey - Did anyone try the Key Lime Waffles I made from a box mix from summer clearance?

One thing I've noticed when using prepackaged mixes for waffles is that they tend to come out crispier, and not in a way I like as much. My guess is that it might have to do with the consistency of the sugar, or the flour, or some mysterious ingredient designed to create a crunchier texture. Who knows?

This is the ingredients list from the cookie mix package.



Here's the recipe I came up with:

Cream together:
1 stick + 1 Tbsp butter, softened
1/4 cup sugar
1 Tbsp molasses
1 Tbsp vanilla
(and then taste it, because you know you want to)

Add:
2 17.5 oz packages of Betty Crocker Eggnog Cookie Mix (Limited Edition!)
2 cups whole milk
1 cup ricotta cheese
1 1/2 cups of egg (9 eggs of various sizes which I actually measured out in volume)(why various sizes? I have chickens, and their eggs are all over the range on sizing, from tiny to jumbo)
1 1/2 tsp baking powder

Then alternate:
2 cups white flour
1 1/2 cups water

And then add this
1/3 cup oil (it keeps the waffles from sticking as much)

Mix well, and start firing up those waffle makers!



I'm sure there's a better way to arrange the input of those ingredients, but that's just how I roll on a waffle-invention quest.

Give it a try, and tell me what ya think. Just don't go to Amazon for the Betty Crocker packs - where some crazy person is selling 2 packs of Eggnog and 2 Gingerbread for $24.87. I think I paid $.90 each!

Waffle Queen: Key Lime Waffles


I'm trying to find all the places I've recorded my waffle recipes and post them here on my blog, with labels, so they can be found, and shared... Viva la Waffle!
This time I bring to you my Key Lime Waffles that I made last summer.

First I mixed the dry ingredients:
One Box of Pillsbury Key Lime Premium Cookie Mix (I think this is a Seasonal item from Target stores)
1 cup all-purpose White Flour
1 cup Ground Almond Meal (I get this at Trader Joe’s)
1 teaspoon Baking Powder

Then, one at a time, I added:
1 cup full-fat Ricotta Cheese
1 stick of Butter, softened
1 tablespoon Coconut Oil
2 teaspoons Vanilla Extract
3 fresh Eggs
2 ½ cups Water
Note: Slowly add the water, ½ cup at a time, or your mixer may kick it all out of the bowl.

Cook on a waffle iron, cool on cooling racks, and enjoy!

Peanut Butter Pumpkin Applesauce Waffles

Last night was Waffle night around here - and you know what THAT means! New Waffle recipe!

Last night's concoction included creamy peanut butter, canned pumpkin, and apple sauce.

I use a Kitchen Aid counter top stand mixer to blend, usually with the flat beater attachment.

1 cup Sugar
2/3 stick of Butter, melted
1/4 cup Vegetable Oil
2 Tbsp Vanilla
3 Tbsp Molasses
12 eggs (because, well, we have chickens!)
1 cup Applesauce (I use the kind without added sugar)
1 cup Creamy Peanut Butter
1/2 of a 29oz can of Pure Pumpkin (freeze the rest for future mixes!)
1 cup Whole Milk

1/2 Cup Almond Meal (I get mine at Trader Joe's)
1/2 Cup Cashew Meal (Trader Joe's)
1/2 Cup Oat Bran
1/3 Cup Ground Flax Seed

Once all of that is good and blended, then rotate adding the following ingredients:
(be careful as the mixing bowl gets full - add those ingredients slowly)

2 1/2 Cups Trader Joe's White Flour
1 1/2 Cups King Arthur White Wheat Flour
2 cups water (adjust for consistency)

I run a small test waffle through the Belgian Waffler first to check for taste and consistency. (Plus that one beeps when it's done.)

The cooked waffles are set out on cooling racks where they are nabbed by waffle eaters. The leftover waffles are cooled, bagged, and frozen or refrigerated to enjoy the rest of the week.

I love to make waffles. I also do it to make something delicious and healthy for my family. I usually invent my waffle recipes as I'm mixing, depending on the ingredients at hand.

We have a small flock of chickens, which is a good thing because I put about a dozen eggs into each batch of waffles.

Currently I am using a Belgium waffle maker which was a wedding present, and a "waffle stick" maker that I picked up at Aldi's for about $15. On special occasions I pull out the Hello Kitty waffler and make Hello Kitty waffle heads. Sadly, I think my original waffle maker has died. I'll have to test it again. Maybe someday I'll invest in some REALLY FANCY wafflers. You know what to get me for presents now, don't ya?

I mix everything up in a Kitchenaid counter top mixer. When the bowls is full, it's time to make waffles! The waffles are laid out on cooling racks, and the stack of leftovers goes into the fridge to enjoy the rest of the week.
